Steps
1. Preheat your oven to 375°F (190°C).
2. Cut the bell pepper in half lengthwise and remove seeds.
3. In a bowl, combine cooked quinoa, chopped spinach, black beans, olive oil, garlic powder, cumin, salt, and pepper.
4. Stuff the bell pepper halves with the quinoa mixture.
5. Place the stuffed peppers in a baking dish and cover with foil.
6. Bake in the preheated oven for 25 minutes.
7. If using cheese, uncover the peppers, sprinkle cheese on top, and bake for an additional 5 minutes until melted.
