Steps
1. Preheat the oven to 400°F (200°C).
2. Peel and slice the carrot into thin rounds.
3. Place the carrot slices and chickpeas on a baking sheet. Drizzle with 1 tablespoon of olive oil and season with salt and pepper. Toss to coat.
4. Roast in the preheated oven for 20-25 minutes, or until the carrots are tender and slightly caramelized.
5. In a small bowl, whisk together the remaining olive oil, lemon juice, honey, salt, and pepper to make the dressing.
6. Arrange the mixed greens on a serving plate. Top with the roasted carrots and chickpeas.
7. Drizzle the dressing over the salad and sprinkle with crumbled feta cheese.
