Steps

1. Preheat oven to 375°F (190°C). 2. Season the chicken breast with salt, pepper, and half the thyme. 3. Heat olive oil in an oven-safe skillet over medium heat. 4. Sear chicken breast for 3-4 minutes on each side until golden brown. 5. Transfer the skillet to the oven and roast the chicken for 12-15 minutes until fully cooked. 6. While the chicken cooks, sauté the shallot in a small pan over medium heat until translucent. 7. Add grapes, remaining thyme, and chicken broth to the shallots and simmer for 5-7 minutes until grapes soften and sauce thickens slightly. 8. Remove chicken from oven and let rest for 3 minutes. 9. Plate the chicken and spoon the grape and thyme sauce over the top. 10. Serve warm.
