Steps

1. Preheat the oven to 200°C (400°F). 2. Season the chicken breast with salt and pepper. 3. Heat olive oil in an oven-safe skillet over medium heat. 4. Sear the chicken breast for 3 minutes on each side until golden brown. 5. Transfer the skillet to the oven and roast the chicken for 10 minutes or until cooked through. 6. Remove chicken and keep warm. 7. In the same skillet, add shallots and cook until translucent. 8. Add grapes and thyme, cook for 2 minutes until grapes begin to soften. 9. Pour in chicken broth and simmer for 5 minutes to reduce the sauce. 10. Serve the chicken topped with the grape and thyme sauce.
