Steps
1. In a small pot, bring water or vegetable broth to a boil.
2. Stir in the oats and reduce heat to simmer. Cook for 5 minutes, stirring occasionally.
3. While oats cook, heat olive oil in a small pan over medium heat.
4. Add chopped spinach and sauté for 1-2 minutes until wilted.
5. Crack the egg into the pan with spinach and cook sunny side up or to your preference.
6. Once oats are creamy and cooked, season with salt and pepper.
7. Transfer oats to a bowl, top with sautéed spinach and egg.
8. Sprinkle shredded cheddar cheese over the top and garnish with chili flakes or herbs if desired.
9. Serve immediately.
