Sakura Mochi Delight

Sakura Mochi is a traditional Japanese sweet featuring soft, chewy rice cake wrapped around sweet red bean paste, with the aromatic touch of cherry blossom leaves. This delightful wagashi is perfect for celebrating the beauty of spring.

Steps

1. In a bowl, mix glutinous rice flour and sugar. 2. Gradually add water and mix until smooth. (Add food coloring if desired.) 3. Microwave the mixture for 1-2 minutes, stirring every 30 seconds until it becomes thick and sticky. 4. Dust your surface with a little cornstarch and transfer the dough onto it. 5. Divide the dough into 2-3 equal pieces and flatten each piece. 6. Place a small spoonful of sweet red bean paste in the center of each piece and wrap the dough around it, sealing it well. 7. Gently flatten the filled mochi into a round shape. 8. Wrap each mochi with a cherry blossom leaf, and serve.
