Steps
1. Start by cooking the chicken breast. Season it with salt and pepper, then grill or pan-fry it in olive oil over medium heat for about 6-7 minutes on each side until cooked through. Let it rest before slicing.
2. While the chicken is cooking, prepare the lime dressing by whisking together the lime juice, olive oil, salt, and pepper in a small bowl.
3. In a bowl, combine the halved cherry tomatoes, corn, and black beans. Drizzle half of the lime dressing over this mixture and toss gently.
4. Slice the avocado in half, remove the pit, and scoop out the flesh. Cut it into slices or cubes.
5. To assemble, place the tomato, corn, and bean mixture at the bottom of a bowl, top it with sliced chicken and avocado, and drizzle the remaining lime dressing on top.
6. Garnish with fresh cilantro if desired and serve immediately.
