Steps
Preheat the oven to 350°F (175°C).
In a small bowl, whisk together the egg, milk, salt, and pepper.
Grease a small baking dish with olive oil.
Tear the bread into pieces and place them in the baking dish.
Pour the egg mixture over the bread, making sure it's well soaked.
Sprinkle the shredded cheese on top, and add parsley if desired.
Bake for 20-25 minutes, or until the egg is set and the top is golden brown.
Let it cool for a few minutes before serving.
