Steps

3. Stir in the cherry tomatoes and spinach, cooking for another 2 minutes until the spinach wilts.
4. In a separate pot, bring the vegetable broth to a gentle simmer.
5. Add the cereal to the broth and cook according to package instructions (usually about 5 minutes).
6. While the cereal cooks, poach the egg in boiling water for 3-4 minutes until the white is set but the yolk remains runny.
7. Once the cereal is cooked, drain any excess broth and season with salt and pepper.
8. Serve the cereal in a bowl, topped with the sautéed vegetables and the poached egg.
9. Sprinkle with Parmesan cheese if desired and enjoy!
