Steps
1. In a small saucepan, heat the vegetable broth over medium heat.
2. Add the whole grain cereal to the broth and cook for 3-5 minutes until the cereal absorbs some liquid and softens.
3. In a bowl, layer the cooked cereal with black beans, diced avocado, cherry tomatoes, and spinach.
4. Drizzle olive oil and lime juice over the top and season with salt and pepper to taste.
5. Garnish with fresh cilantro and serve warm.
