Steps

4. Add the chopped spinach and halved cherry tomatoes to the skillet, sautéing for 2-3 minutes until the spinach is wilted.
5. In a small pot, bring water to a gentle simmer and poach the egg for about 3-4 minutes, until the whites are set but the yolk is runny.
6. Once the cereal is cooked, season with salt and pepper, and divide it into a bowl.
7. Top the cereal with the sautéed vegetables and the poached egg.
8. Sprinkle with Parmesan cheese if desired and serve immediately.
