Steps

1. In a small saucepan, heat the vegetable broth over medium heat until simmering. 2. Add the whole grain cereal to the broth and cook according to package instructions, usually about 5 minutes. 3. While the cereal is cooking, heat the olive oil in a separate skillet over medium heat. 4. Add the chopped spinach and halved cherry tomatoes to the skillet, sautéing for 2-3 minutes until the spinach is wilted. 5. In a small pot, bring water to a gentle simmer and poach the egg for about 3-4 minutes, until the whites are set but the yolk is runny. 6. Once the cereal is cooked, season with salt and pepper, and divide it into a bowl. 7. Top the cereal with the sautéed vegetables and the poached egg. 8. Sprinkle with Parmesan cheese if desired and serve immediately.
