Steps
1. Rinse the quinoa under cold water and drain.
2. In a small saucepan, combine quinoa and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until quinoa is cooked and liquid is absorbed.
3. In a separate pan, heat olive oil over medium heat. Add corn and sauté for 5 minutes until heated through.
4. In a bowl, whisk together lemon juice, garlic powder, salt, and black pepper.
5. Once quinoa is cooked, fluff it with a fork and mix in sautéed corn, parsley, cilantro, and feta cheese if using.
6. Drizzle the lemon dressing over the quinoa mixture and toss gently to combine.
7. Serve warm or at room temperature.
