Steps
1. Preheat the oven to 400°F (200°C).
2. Toss the mixed vegetables with olive oil, salt, black pepper, garlic powder, and paprika. Spread them evenly on a baking sheet and roast for 20-25 minutes, or until tender and slightly caramelized.
3. In a small saucepan, bring the vegetable broth to a boil. Stir in the rolled oats and reduce the heat to low. Cook for 5 minutes, stirring occasionally, until the oats are tender and creamy.
4. Transfer the cooked oatmeal to a serving bowl. Top with the roasted vegetables, grated Parmesan cheese, and chopped fresh parsley.
