Steps
1. Heat olive oil in a pan over medium heat.
2. Sauté diced onions and bell peppers until softened.
3. Add diced zucchini and minced garlic, cook for another 2 minutes.
4. In a separate pot, bring vegetable broth to a boil.
5. Add rolled oats to the boiling broth, reduce heat and cook for 5-7 minutes.
6. Season oatmeal with salt and pepper.
