Steps
1. Bring water and salt to a boil in a small pot.
2. Add oats, reduce heat to low, and simmer for 5 minutes, stirring occasionally until creamy.
3. While oats cook, heat olive oil in a pan over medium heat.
4. Add chopped spinach and sauté for 2-3 minutes until wilted. Season with a pinch of salt.
5. Poach the egg: bring a small pot of water to a gentle simmer, add a splash of vinegar (optional), crack the egg into a small cup, then gently slide it into the simmering water.
6. Cook the egg for 3-4 minutes until the white is set but yolk remains runny. Remove with a slotted spoon.
7. Pour cooked oatmeal into a bowl, stir in sautéed spinach.
8. Top with the poached egg, sprinkle with Parmesan cheese, salt, pepper, and chili flakes if using.
9. Serve immediately.
