Steps
1. In a small pot, bring water or vegetable broth to a boil.
2. Add the rolled oats, reduce heat, and simmer for about 5 minutes until creamy.
3. While the oats cook, heat olive oil in a pan over medium heat.
4. Add spinach and sauté until wilted, about 2-3 minutes. Season with salt and pepper.
5. Poach the egg: bring a small pot of water to a gentle simmer, add a splash of vinegar (optional), create a whirlpool, and gently slide the egg in. Cook for 3-4 minutes until the white is set.
6. Stir the sautéed spinach into the cooked oatmeal.
7. Transfer oatmeal to a bowl, top with the poached egg.
8. Sprinkle with Parmesan cheese or chili flakes if desired. Serve immediately.
