Steps
1. Bring the water and salt to a boil in a small saucepan.
2. Add the oats, reduce heat, and simmer for 5 minutes, stirring occasionally until creamy.
3. While oats cook, heat olive oil in a small pan over medium heat.
4. Sauté chopped spinach until wilted, about 2 minutes, then set aside.
5. Poach the egg: bring a small pot of water to a gentle simmer, add a splash of vinegar (optional), create a whirlpool, and gently drop the egg in. Cook for 3-4 minutes until the white is set.
6. Stir the sautéed spinach into the cooked oatmeal.
7. Transfer oatmeal to a bowl, top with the poached egg.
8. Season with salt, pepper, and optional chili flakes or Parmesan.
9. Serve immediately.
