Steps
1. Bring the water or vegetable broth to a boil in a small pot.
2. Add the oats, reduce heat, and simmer for about 5 minutes until creamy.
3. While oats cook, heat olive oil in a pan over medium heat.
4. Add spinach and sauté until wilted, about 2-3 minutes.
5. Poach the egg in simmering water for 3-4 minutes until the white is set but yolk remains runny.
6. Stir the sautéed spinach into the cooked oats, season with salt, pepper, and chili flakes if using.
7. Pour oatmeal spinach mixture into a bowl, top with the poached egg and sprinkle with Parmesan cheese if desired.
8. Serve immediately.
