Steps
1. Spiralize the cucumber into noodle shapes and place in a large bowl.
2. Julienne the carrot and add it to the cucumber noodles.
3. In a small bowl, whisk together lime juice, soy sauce, honey, and chopped red chili to create the dressing.
4. Pour the dressing over the cucumber and carrot mixture and toss gently to combine.
5. Add chopped cilantro and mint, and mix lightly.
6. Season with salt and pepper to taste.
7. Sprinkle crushed roasted peanuts on top for added crunch before serving.
