Savory Potato and Pork Egg Muffins

Preheat your oven to 375°F (190°C). In a small skillet, heat a little olive oil over medium heat and sauté the onions until translucent, about 3 minutes. Add the diced potatoes and cook until slightly tender, about 5 minutes, then add the diced pork to warm through. In a bowl, whisk together the egg, milk, salt, and pepper. Grease a muffin tin with olive oil and divide the pork, onion, and potato mixture evenly among the muffin cups. Pour the egg mixture over each cup until just full. Bake in the preheated oven for 15-20 minutes or until the egg is set and lightly golden. Let cool slightly before removing from the tin and enjoy warm or at room temperature.
