Steps
1. Make the pasta dough by combining flour and a pinch of salt on a clean surface. Create a well in the center and add the egg and olive oil. Mix until a dough forms, then knead for about 5 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.
2. While the dough rests, prepare the banana puree. In a blender, combine the ripe banana, honey, and lemon juice. Blend until smooth and creamy. Set aside.
3. Roll out the pasta dough into thin sheets using a pasta machine or rolling pin. Cut into squares (about 5x5 cm).
4. Place a small spoonful of shredded meat in the center of each square. Moisten the edges with water, fold the pasta over, and press to seal, ensuring there are no air bubbles.
5. Bring a pot of salted water to a boil and cook the ravioli for about 3-4 minutes until they float to the surface.
6. Drain the ravioli and plate them. Drizzle with banana puree and garnish with fresh basil leaves and a sprinkle of black pepper.
