- In a bowl, whisk the eggs until well combined. Season with salt and pepper.
- Heat olive oil in a non-stick skillet over medium heat.
- Add the chopped spinach and sauté until wilted, about 1-2 minutes.
- Pour the whisked eggs into the skillet and gently stir with a spatula.
- As the eggs start to set, add the crumbled feta cheese and continue to cook until the eggs are fully cooked but still soft.
- If desired, sprinkle with red pepper flakes before serving.
