Steps
1. In a bowl, whisk the eggs until well combined. Season with salt and pepper.
2. Heat olive oil in a non-stick skillet over medium heat.
3. Add the chopped spinach and sauté until wilted, about 1-2 minutes.
4. Pour the whisked eggs into the skillet and gently stir with a spatula.
5. As the eggs start to set, add the crumbled feta cheese and continue to cook until the eggs are fully cooked but still soft.
6. If desired, sprinkle with red pepper flakes before serving.
