Steps
1. Cut the chicken breast into bite-sized pieces and season with salt and pepper.
2. In a pan, heat the olive oil over medium heat. Add garlic and ginger, sauté for 1 minute.
3. Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes.
4. Add the broccoli, bell pepper, and carrot to the pan. Stir-fry for another 3-4 minutes until vegetables are tender.
5. Pour in the soy sauce and mix well, allowing the chicken and vegetables to glaze evenly. Cook for another 1-2 minutes.
6. Serve hot over cooked rice if desired.
