Spanish eggs and tomato

Steps

1. In a medium skillet, heat the olive oil over medium heat and sauté the garlic until golden. 2. Add the tomatoes, oregano, salt, and pepper, and cook for 3-4 minutes until the tomatoes are lightly cooked. 3. Crack the egg over the tomato mixture and gently stir the egg into the tomato mixture. 4. Cover the skillet and cook for 5 minutes until the egg is cooked. 5. Serve with a sprinkle of fresh oregano.
