Steps
1. Bring a pot of lightly salted water to a boil and add in the linguine. Cook according to package instructions.
2. Meanwhile, in a small bowl, combine the mashed avocado, lemon juice, and garlic powder. Set aside.
3. Once the pasta is done cooking, drain it and return it to the pot.
4. Add the avocado mixture and cook on low heat for 1-2 minutes.
5. Stir in the spinach until it wilts.
6. Drizzle the olive oil on top and season with salt and pepper, to taste. Enjoy!
