Spanish Rice Bake

Delicious combination of rice, vegetables and spices. A vegetarian main dish with Spanish inspiration.

Steps

1. Preheat the oven to 375 degrees F. 2. Cook the brown rice according to the instructions. 3. In a saucepan, fry the onion and bell pepper in some olive oil with some salt, pepper and garlic. 4. When the onion and bell pepper are fragrant and beginning to brown, add the tomato sauce, paprika, oregano, cumin and some more salt and pepper. Let simmer for 3-5 minutes. 5. Add the peas and the cooked brown rice to the saucepan and mix all ingredients together. 6. Transfer the rice mixture to an oven-safe dish and sprinkle the cheese on top. 7. Bake for 25 minutes or until the cheese is bubbly and golden.
