Steps

1. Heat the oil in a pan over medium heat. Add cumin seeds and let them sizzle for a few seconds. 2. Add the chopped onion and sauté until translucent. 3. Stir in garlic, ginger, and green chili (if using), cooking for another minute until fragrant. 4. Add diced beetroot and sauté for 5 minutes, mixing well with the spices. 5. Sprinkle coriander powder, turmeric powder, and salt, and mix everything together. 6. Pour in the water and bring to a gentle simmer. Cover and cook for about 15-20 minutes until the beetroot is tender. 7. Once cooked, sprinkle garam masala and stir well. Cook for an additional 2 minutes. 8. Garnish with fresh cilantro before serving.
