Spicy Black Bean Enchiladas

Steps

1. Preheat the oven to 375°F. 2. In a skillet, sauté the bell peppers and onions until softened. Add black beans, cumin, chili powder, salt, and pepper, and cook for a few more minutes. 3. Warm the corn tortillas and fill each with the black bean mixture. Roll them up and place in a baking dish. 4. Pour enchilada sauce over the top and sprinkle with cheese. 5. Bake for 15-20 minutes until the cheese is melted and bubbly. 6. Serve hot and enjoy!
