Steps
1. In a small pan, heat olive oil over medium heat.
2. Add the black beans, diced tomatoes, cumin, smoked paprika, salt, and pepper. Stir well and cook for about 5 minutes until heated through.
3. In a bowl, layer the cooked quinoa at the bottom.
4. Top with the spicy black bean mixture.
5. Add sliced avocado on top and garnish with fresh cilantro if desired.
6. Serve with a lime wedge for added zest.
