Steps
1. Heat the vegetable oil in a pan over medium-high heat.
2. Add the minced garlic and grated ginger, sautéing for about 30 seconds until fragrant.
3. Add the sliced chicken breast to the pan, cooking until browned and cooked through, about 5-7 minutes.
4. Toss in the sliced bell peppers and stir-fry for an additional 3-4 minutes until they are tender-crisp.
5. Push the chicken and peppers to one side of the pan and crack the egg into the empty space, scrambling it until cooked.
6. Combine everything in the pan, add soy sauce, and season with salt and pepper.
7. Serve hot, garnished with chopped green onions.
