Spinach and Feta Pie

This delicious Spinach and Feta Pie is a Vegetarian delight! Perfect for lunch or dinner and enjoy with a glass of white wine!

Steps

1. Preheat the oven to 175°C/347°F. 2. In a large bowl whisk together eggs with crumbled feta cheese and season with salt and pepper. 3. Heat the oil in a skillet and add the onion. Sauté for a few minutes until the onion is soft. 4. Add the spinach and continue to sauté for a few more minutes until the spinach is wilted and cooked. 5. Add the spinach and onion mix to the egg and feta mix and stir everything together. 6. Grease a 20 cm (8 in) pie dish,cut the filo pastry in half lengthwise, and line the dish with the half sheet of filo. 7. Pour the egg and feta mix into the dish and top with the other half sheet of filo. 8. Bake in the preheated oven for 20-25 minutes until golden and the center is set. 9. Take out the oven and let it cool before serving. Enjoy!
