Steps
1. Preheat oven to 375°F (190°C).
2. Rinse quinoa and cook it in 1/2 cup water until fluffy (about 15 minutes).
3. Cut the top off the bell pepper and remove seeds and membranes.
4. In a skillet, heat olive oil over medium heat. Sauté onion and garlic until translucent.
5. Add diced tomato, cooked quinoa, smoked paprika, salt, and pepper. Stir and cook for 3-4 minutes.
6. Stuff the bell pepper with the quinoa mixture and place it in a baking dish.
7. Sprinkle cheese on top if using.
8. Bake for 20 minutes until pepper is tender and cheese is melted.
9. Garnish with fresh parsley before serving.
