Steps
1. Preheat the oven to 375°F (190°C). Cut the top off the bell pepper and remove the seeds.
2. In a bowl, mix quinoa, black beans, corn, diced tomatoes, cheese, cumin, chili powder, salt, and pepper.
3. Stuff the bell pepper with the quinoa mixture.
4. Place the stuffed pepper in a baking dish and bake for 25-30 minutes, until the pepper is tender.
