
Steps
- Preheat your oven to 375°F (190°C).
- Cut the top off the bell pepper and remove the seeds.
- In a bowl, mix the cooked quinoa, black beans, diced tomatoes, cumin, paprika, salt, and pepper until well combined.
- Stuff the mixture into the hollowed bell pepper, pressing down gently to pack it in.
- If using, sprinkle shredded cheese on top of the stuffed pepper.
- Place the stuffed pepper upright in a baking dish and add a splash of water to the bottom of the dish.
- Cover with foil and bake for 25-30 minutes.
- Remove from the oven, garnish with fresh cilantro if desired, and serve warm.
