
Steps
- Preheat the oven to 375°F (190°C).
- Cut the top off the bell pepper and remove the seeds and membranes.
- In a bowl, combine the cooked quinoa, black beans, diced tomatoes, corn, cumin, chili powder, salt, and pepper.
- Stuff the bell pepper with the quinoa mixture and top with cheese if using.
- Place the stuffed pepper in a small baking dish and add a splash of water to the bottom.
- Cover with foil and bake for 25 minutes.
- Remove the foil and bake for an additional 5 minutes until the cheese is melted and the pepper is tender.
- Garnish with fresh cilantro before serving.

- Fresh cilantro for garnish
