Steps
1. In a food processor, combine the pitted dates, rolled oats, almond butter, honey or maple syrup, and a pinch of salt.
2. Blend until the mixture is sticky and well combined.
3. If using, add cocoa powder for a chocolate flavor and blend again.
4. Transfer the mixture to a bowl and fold in the chopped nuts.
5. Using your hands, roll the mixture into bite-sized balls.
6. Place the energy bites on a plate and refrigerate for about 30 minutes to firm up.
