Swiss Lamb with Pear and Potato Gratin

Steps

1. Preheat your oven to 200°C (400°F). 2. In a skillet, heat olive oil over medium heat. Season the lamb chops with salt and pepper, then sear them for about 3-4 minutes on each side until browned. Remove from heat and set aside. 3. In a bowl, mix heavy cream, minced garlic, a pinch of salt, and pepper. 4. In a greased baking dish, layer half of the sliced potatoes at the bottom, then add half of the pear slices. 5. Pour half of the cream mixture over the potatoes and pears, and sprinkle with half of the Gruyère cheese. 6. Repeat the layers with the remaining potatoes, pears, cream mixture, and cheese. 7. Place the seared lamb chops on top of the gratin and cover with foil. 8. Bake in the preheated oven for 25-30 minutes, then remove the foil and bake for an additional 10 minutes until golden and bubbly. 9. Let it rest for a few minutes before serving, garnished with fresh thyme.
