Steps
1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. In a small bowl, whisk together the soy sauce, mirin, honey, grated ginger, and minced garlic.
3. Place the salmon fillet on the prepared baking sheet and brush the teriyaki sauce over the top. Season with salt and pepper.
4. Bake the salmon for 12-15 minutes, or until it flakes easily with a fork.
5. Meanwhile, steam the mixed vegetables until tender, about 5-7 minutes.
6. Heat a small amount of cooking oil in a skillet over medium heat. Add the steamed vegetables and sauté for a minute. Season with salt and pepper.
7. Serve the teriyaki salmon with the steamed vegetables on the side.
