Thai Spicy Pork and Egg Soup

A flavorful and spicy Thai soup made with tender pork, eggs, peppers, and a hint of soy sauce.

Steps

1. Heat the vegetable oil in a large pot over medium heat. Add the minced garlic and red curry paste, and sauté for 1 minute. 2. Add the sliced pork to the pot and cook until browned, about 5 minutes. 3. Pour in the chicken broth and bring to a simmer. Cook for 10 minutes. 4. Add the beaten eggs to the simmering soup, stirring gently to create ribbons of cooked egg. 5. Stir in the soy sauce, fish sauce, and lime juice. Season with salt and pepper to taste. 6. Add the sliced bell peppers to the soup and let simmer for an additional 5 minutes. 7. Serve the soup hot, garnished with fresh cilantro.
