Steps

1. Preheat oven to 350F. 2. In a bowl, add all of the diced vegetables and seasonings. Drizzle with olive oil and mix to combine. 3. Place the vegetables into a greased oven safe dish. 4. Top with tortilla chips, and bake for 25-30 minutes, or until vegetables are tender and crispy. 5. Season with salt and pepper and enjoy!

1/2 medium onion, diced 1 medium potato, diced 1 zucchini, diced 1 bell pepper, diced 1 tablespoon olive oil 1/2 teaspoon of each seasonings you like (garlic powder, oregano, etc.) Tortilla chips, enough to cover the top of the casserole Salt and pepper to taste
