A light take on a traditional omelette made with bell pepper, eggs, and onions.

Steps

1. Heat a medium non-stick skillet over medium-high heat. 2. Add olive oil to the skillet, then add onions and bell pepper. Fry for about 2 minutes, until vegetables are softened. 3. Whisk eggs in a medium-sized bowl until whites and yolks are completely mixed. 4. Add eggs to the skillet and stir gently. Add salt and pepper, stirring until eggs are cooked through. 5. Serve immediately, garnished with desired toppings.
