Steps
1. Heat a large skillet or wok over medium heat and add oil.
2. Add carrots , onions, and potatoes. Cook stirring frequently for about 3 minutes.
3. Push vegetables to the sides of the skillet and add the egg in the middle. Scramble the egg and then mix it with the veggies.
4. Add cooked rice, stirring to combine with the vegetables. Continue to stir fry for about 3 minutes.
5. Serve the Fried Rice warm.
