
Steps
- Heat olive oil in a pan over medium heat.
- Add diced carrots and sauté for 2 minutes.
- Stir in diced tomatoes and mixed beans, cook for another 2 minutes.
- Push the veggies to the side of the pan and crack eggs into the empty space.
- Scramble the eggs until cooked, then mix with the veggies.
- Add cooked rice to the pan and stir everything together.
- Season with salt and pepper to taste.
- Serve hot and enjoy!
