Steps
1. Heat olive oil in a pan over medium heat.
2. Add diced carrots and sauté for 2 minutes.
3. Stir in diced tomatoes and mixed beans, cook for another 2 minutes.
4. Push the veggies to the side of the pan and crack eggs into the empty space.
5. Scramble the eggs until cooked, then mix with the veggies.
6. Add cooked rice to the pan and stir everything together.
7. Season with salt and pepper to taste.
8. Serve hot and enjoy!
