Steps
1. Preheat the oven to 200ºC (400ºF).
2. Cut the courgette, pepper, red onion and mushrooms into cubes. Place in a bowl.
3. Mince the garlic.
4. Add the oregano, paprika, olive oil, mint, chili powder, salt and pepper to the bowl and mix everything together.
5. Place the vegetables on a greaseproof paper-lined baking tray. Slide into the oven and bake for 15-20 minutes.
6. In another bowl, mix together the Greek yogurt with a pinch of salt and the minced garlic.
7. Serve the kebab with the herby yogurt sauce.
