1. Preheat oven to 375°F. 2. Heat a small skillet with olive over medium heat. 3. Season chicken breast with salt and pepper, then brown each side for 3 minutes. 4. Place chicken in a small oven-safe dish and pour mustard over top. 5. Heat the same skillet with olive oil over medium heat, then add diced onion and cook for 3 minutes. 6. Add diced tomatoes and cook for an additional minute. 7. Add uncooked rice and chicken broth to the skillet. 8. Spoon onion and tomato mix over the chicken in the oven-safe dish. 9.
