Arab Style Roasted Vegetables

A flavorful and satisfying vegetarian main dish inspired by Arab cuisine. Roasted carrots, garlic, and potatoes are glazed with soy sauce and served with juicy tomatoes.

Steps

1. Preheat the oven to 400°F (200°C). 2. Peel and chop the carrots, garlic, and potato into bite-sized pieces. 3. In a mixing bowl, toss the chopped vegetables with the soy sauce until well coated. 4. Spread the vegetables in a single layer on a baking sheet. 5. Roast in the preheated oven for 25-30 minutes, or until the vegetables are tender and slightly caramelized. 6. While the vegetables are roasting, dice the tomatoes. 7.
