Argentinian Cauliflower & Courgette Risotto

This tasty and light Argentinian risotto is perfect for a side dish, it is low-carb and easy to make.

Steps

1. Chop the cauliflower and courgette into small pieces. 2. Heat the oil in a pan over medium heat. 3. Add the cauliflower and courgette, stirring continuously until the vegetables are softened. 4. Add the cumin, paprika, garlic powder, turmeric, salt and pepper and mix everything together. 5. Cook on low heat until all the vegetables are softened and mixed together.
