Steps

1. Cut the beef into bite-sized cubes and set aside. 2. In a pan, heat the vegetable oil over medium heat and sauté the chopped onion until translucent. 3. Add the minced garlic, ginger, turmeric, and chopped chilies; cook for 2-3 minutes until fragrant. 4. Stir in the beef cubes and cook until browned all over. 5. Add the bruised lemongrass, kaffir lime leaves, and coconut milk; bring to a simmer. 6. Mix in the tamarind paste, sugar, and salt. Cover and reduce the heat to low. 7. Simmer for 1.5 to 2 hours, stirring occasionally, until the beef is tender and the sauce thickens. 8. Taste and adjust seasoning if necessary. Serve hot, garnished with fresh coriander.
