Steps
1. Peel and mash the banana in a bowl until smooth.
2. Crack the eggs into the bowl and whisk together with the banana until fully combined.
3. Add cinnamon, vanilla extract, and salt if using, and mix well.
4. Heat a non-stick pan over medium heat and add a small amount of butter or oil.
5. Pour small portions of the batter into the pan to form pancakes.
6. Cook for about 2 minutes on each side or until golden brown and set.
7. Serve warm, optionally with a drizzle of honey or fresh fruit.
