Banana Carrot Pancakes

Steps

1. In a mixing bowl, mash the banana with a fork. 2. Add the grated carrot, eggs, milk, honey (if using), cinnamon, and salt. Mix well. 3. Sift in the flour and baking powder. Stir until just combined, being careful not to overmix. 4. Heat a non-stick skillet or griddle over medium heat. Add a small amount of butter or oil. 5. Pour 1/4 cup of the batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook for another minute or until golden brown. 6. Repeat with the remaining batter. 7. Serve the pancakes warm with your favorite toppings, such as sliced bananas, maple syrup, or yogurt.
